Dinner Group

Since about August we have been doing a Dinner Group once a month with a couple of our friends. How it works is we rotate to each other's home each month and whoever the hostess is that month makes the main dish, then the other couples bring either the side dish and dessert.

Well this month it was my turn to host so I had the main dish. I wasn't really sure what I was going to make. I'm not that adventurous of a cook, I like things that are 'no fail' and reliable! No goofy ingredients and no major processes to get the meal done! I explained this to one of my clients a couple of weeks ago and she told me of this WONDERFUL Potato soup recipe that she had and that she would bring it to me.

So I went and purchased the ingredients and set out to make it once I got home from work last Saturday. Thank goodness it was an easy recipe because I was late getting off of work and our friends were on their way over!

I'm glad to report that the Potato Soup was FABULOUS!!! It was a hit with everyone! Everyone wanted seconds, unfortunately even after I doubled the recipe there wasn't quite enough for all to have seconds! Luckily Danette brought yummy artichoke dip and bread and we had a fabulous Apple Crisp and vanilla ice cream dessert waiting for us!

Anyway, I wanted to share this yummy recipe with you! Believe me, if I can make this soup, YOU can make it! ;) ENJOY!

Potato/Meatball Soup
1/2 cup Butter
2 Cups half and half
1 cup onion-chopped
3 stalks celery - diced
4 TBSP flour (I had to use a little more)
2 cups chicken broth
4 large potatoes
salt & pepper
1 pkg frozen Italian meatballs
Directions:
Peel potatoes, cute in small chunks, cook in water until tender. Mash some of them coarsely.
Saute onions & celery in butter till tender
Add flour slowly, stirring till thickens (about 3 mins)
Remove from heat, Add broth and half & half while whisking. Add potatoes.
Add salt and pepper
Microwave frozen meatballs as directed on package. Cut in half, add to soup.
Stir soup until thickens over med/high heat.

Hey thanks for sharing that recipe. Sounds yummy. I a glad you time to make the dinner after a full day at work! Wow, that is crazy, but again, you are young. Darling picture of the Kenzigirl on your heading. She looks like she was laughing her head off!!

The blog looks cute mom! YAY for updates!!! :) That recipe sounds so yummy! I will have to try it sometime! I wonder how it would be if you added some cheese too? Because everything's always better with cheese right??!! :)

Diner groups are fun. We actually are part of one. It is our turn (has been since oct). Had many reasons why we didn't do it. i'll have to try the recipe. Sounds good.

What a good idea... I think I might implement that idea with our friends!! The recipe sounds delicious. I love soup in the winter!
